Autumn Harvest Soups and Salads

Shift your perspective and gain fresh inspiration for soups and salads as Autumn’s chill yields peak of season ingredients.

In this class, we’ll prepare:

  • Hearty farro salad featuring local apples and backyard herbs
  • Delicata squash salad, highlighting the easiest local squash of all the CT varieties (cheese on the side if requested)
  • Warm cauliflower salad with dried fruit and pistachios
  • Sweet and savory red lentil soup; Middle Eastern inspired

This class is vegetarian, dairy-free and BYOB. We save time at end of the class to enjoy eating around a communal table. Liz will round out the menu with freshly baked bread and an autumn inspired dessert. This menu highlights CT produce being harvested in mid-October; items may change slightly depending on availability of ingredients.
